Reminds a lot about the older world style of wine. This elegant wine is very multi dimensional on the nose and palate and changes quite a bit when left in the glass. Might need decantation after a couple of years.

Serve with red meat & stews.

about the harvest: Handpicked at 25Â° Balling.

in the cellar : Destemmed and crushed into stainless steel fermenters. Juice pumped over 3-4 times/day. Fermented dry on skins before pressing. Malolactic fermentation is done in stainless steel tanks before transferred to 3rd and 4th fill French oak barrels. n the end the best barrels are selected for this blend and the components are used to make the best possible blend.
Barrel details: 20 months in 60% new French oak
