about the harvest: The grapes were harvested at sugar level of about 24°B from 20th February – 23rd March.

in the cellar : The grapes were crushed and pumped into a stainless steel tank. The juice was left on the skins until sufficient colour extraction had been obtained. The juice was settled, racked and inoculated with a cultured yeast strain. Fermentation took place in stainless steel tanks for 12 days at 15°C.
