Inky black in colour a very dense wine, with big tannins and structure for a Merlot. Prominent fruity aromas with chocolate mocha flavours with hints of coffee. It has ripe black cherries and plum aromas, which carry through to the palate and are enhanced by oak and cigar box flavours from 18 months in wood. It has a complex lingering aftertaste. The wine has not been stabilized or filtered.

Rare roast sirloin with horseradish cream, rump steak with garlic butter, butterflied leg of lamb basted with rosemary and garlic.

about the harvest: The grapes were picked at 26.6ºBalling.

in the cellar : 14 days on the skins open tank pump over, malolactic fermentation. French Oak barrels used, twice racked during maturation and placed in the same barrel. Matured for 18 months, light egg white fining before bottling. Wine is unfiltered.
