in the vineyard : Soil: Grown on the red soils with medium potential. All vineyards are unirrigated bush vine.
Climate: The Swartland falls within the coastal winter rainfall area. Warm, dry summers, moderated by cool Atlantic breezes.
Annual rainfall: 400mm average.

about the harvest: Cinsaut is picked at a sugar of 22.5º Balling.

in the cellar : A process of thermo-vinification (heat treatment) is used to extract the colour from the skins. After the heat treatment the skins are softly pressed and the juice is cooled down and fermented in stainless steel tanks. Malolactic fermentation is finished. Final blends are made prior to bottling.
