about the harvest: The grapes were harvested at an average of 24° Balling.

in the cellar : Grapes was harvested early in the morning and left on the skins until enough colour and flavour was extracted. Settled overnight and inoculated with selected yeast. Fermented cold to capture all the natural fruit flavours. After desired balance between sugar and acid was reached fermentation was stopped and wine was filtered.
