in the cellar : Special Late Harvest is made from Weisser (White) Riesling and Chenin Blanc grapes picked at optimum ripeness in the Wellington district of the Paarl wine region of South Africa. According to SA wine legislation, the grapes must have a sugar level of at least 22 degrees Balling when harvested for a wine to be certified as a Special Late Harvest.

After pressing and fermentation, the vinification process is halted at the desired sugar content level.. The wine is then filtered, stabilised, and bottled, after which it is matured in the bottle until release. The result is a full sweet dessert wine wine.
