in the vineyard : The 2001 Cyril Back Shiraz were produced from grapes grown on a number of different blocks at Fairview. A hillside block on decomposed granite and a low yielding vineyard on a sandy valley floor soils. Yields of Shiraz are kept to less than 7 tons/ha.

about the harvest: Harvest date : March 2001

in the cellar :  Grapes were destemmed and evry lightly crushed. Rhone yeast were used for fermentation. Malolactic for some of the wine were completed in tank with remainder in barrel, the wine racked and send for barrel for 14 months. Wine from both French and American oak were chosen for this wine.
