Spier Private Collection Shiraz (Barrel Sample) 2003

Veritas 2005 - Silver
The wine is dark plum in colour, with a youthful, purple edge. Inviting aromas of ripe berry fruit, primarily cherry, are enhanced by touches of spice and vanilla. These follow through on the soft palate where hints of toasted cinnamon mingle with delicious layers of fruit and attractive sweetness contributed by the American oak. Firm acid and good alcohol promise excellent bottle maturation potential.

Serve with venison, steak, oxtail, Karoo lamb and mutton, duck, roast chicken, mushroom dishes or biltong.

Trellised, 8-year-old vines planted on west-facing slopes yielded the grapes for this wine. The vineyards received 2 supplementary drip irrigations during the picking season and produced 8 tons per hectare.

in the cellar : Grapes grown in selected vineyard blocks were hand-harvested at between 25.5°and 26° Balling and carefully de-stemmed. The grapes were then cooled down to approximately 12° Celsius and cold-soaked prior to temperature-controlled fermentation. A portion of the juice was fermented in an open fermenter. Fermentation was completed in oak barrels and the wines were matured in a combination of French and American oak. The wines from selected barrels were then blended at a ratio of 93.22% Shiraz, 3.88% Malbec and 2.91% Viognier.
