in the vineyard : Clairvaux Cabernet Sauvignon is grown on a perfect eastern slope with a perfect mix of stone and shaly soils. Production of 8 ton/ha and ripening end March is essential for the grassy and coffee flavours.

in the cellar : Cold maceration for 24 hours at 15ºC. Fermentation in open stainless steel tanks. Pumping over and manually mixing with plungers. French chips on skins. Frnech staves on Malolactic. 30% of blend matured in barrels. Free run juice.
