about the harvest: Hand harvested.

in the cellar : Destemmed and crushed as cool as possible in stainless steel tanks. Fermentation was done in 2 cold soak, 3 times per day pump over and 8 days post fermentation maceration. Malolactic fermentaion done. Ageing in barrels with French oak Staves for 6 months.
