in the vineyard : Vine age – 15 years: vine density – 4000 vines per hectare; yield 6-7 tons per hectare. Probably the most balanced block on the farm in terms of vine growth and yield. A low canopy allowed high sun penetration. Minimal irrigation was used. The fruit ripened slowly, allowing development of small bunches with highly concentrated flavours.

about the harvest: Grapes were picked at 5h00 in the morning.

in the cellar : The grapes were vinified, using highly reductive processes. Juice remained in contact with the skin for 10 hours before pressing. The juice was settled for 24 hours and then racked. Fermentation occurred over a 14 day period, using two different yeast types before the wine was filtered and bottled.
