in the vineyard : Fourteen year old vines, 4000 vines per hectare, yielding six tons per hectare. Minimal irrigation, slow ripening allowing development of small bunches with highly concentrated flavours.

in the cellar : Grapes picked at 05:00 in the morning and vinified using highly reductive processes. Juice in contact with skin for four hours before pressing. Fermentation over a fourteen day period.
