in the vineyard : Vine age – 9 years Semillon and 15 years Sauvignon Blanc; vine density - 2800 vines per hectare for the Semillon and 4000 vines per hectare for the Sauvignon Blanc. Both vineyard blocks are extremely well balanced between growth and yield with proportional leaf density. The Semillon achieved top viticultural awards over the past 3 vintages and the expectations are even higher as the vines mature.

in the cellar : Both cultivars were vinified separately using highly reductive processes. Dry ice was applied throughout the destemming stages. The Semillon was pressed whole-bunch while Sauvignon Blanc was only destemmed and whole-berry pressed. The juice was settled and three separate yeasts were inoculated, chosen specifically for each cultivar. After fermentation the juice was consolidated, filtered and bottled.
