about the harvest: Single vineyard selected grapes. Harvested at optimum sugar levels to abtain all the characters of Pinotage in the grapes.

in the cellar : De-stemmed, crushed and cold macerated for two days in rototanks to obtain colour and flacour before fermentation. Inoculated for fermentation with yeast, ferment on skins until dry. Malolactic fermentation in stainless steel, transfer to new French oak barrels (225lt), aged for 18 months.
