Fairview La Beryl Rouge 2004

This is a very special wine with enormous poise and concentration. The Shiraz has created incredible depth and spiciness in this wine, and the amalgamation of flavours is intense.
Colour: Deep, rich "black" purple.
Aroma: Intense cloves and allspice, combine with upfront bright fruit.
Palate: Full mouthfeel, with good follow through from the nose. Fresh clean finish and good length.

in the vineyard : Fairview La Beryl, a traditional handcrafted straw wine, personifies the quintessence of grape.

about the harvest: Shiraz grapes were harvested ripe at 22º Balling and gently placed into small lug boxes in which they were transported to a shed where they were carefully laid out on straw covered racks to dry.

in the cellar : The grapes were pressed at approximately 40º Balling. The drying took approximately four weeks. A single barrel of dark, rich Shiraz then fermented for five months, until yeast activity had ceased, leaving the wine with a lovely balance of sugar and acid.
