in the vineyard : Due to its altitude higher up the farm (200-220m above sea level), southerly aspect and exposure to the cooling south easterly breeze which blows daily in the hot summer months of January and February coupled with slightly poorer soils, the vines are able to produce richly flavoured grapes with high levels of organic acids beneficial to the production of striking wines.

about the harvest: Early morning picking.

in the cellar : Early morning picking coupled with gentle pressing resulted in the recovery of fresh, healthy juice which was lightly racked before being inoculated for fermentation. After 4 months lees maturation the wine was stabilized, lightly filtered and bottled under screw-cap.
