in the vineyard : The single most distinguishing feature of our Cape Winelands must rest in the panoramic splendour of its folded mountains. Mountains that surround the vineyards and present a picture of artistic delight. Nestled in one of these most impressive mountain locations is a farm called “Kaaimansgat” (Crocodile’s Lair). It is a uniquely hidden site where the Chardonnay grapes ripen amongst the latest in the Cape! One of the reasons for this late ripening is the fact that this valley behind the village of Villiersdorp is impacted by parallel mountain ranges which reduce the length of the diurnal. The uniqueness of this terroir is illustrated by particularly fine fruit – small berries which offer a high skin-to-juice ratio.

about the harvest: Harvested later than usual – the latter half of March – a vintage characterized by slow maturity.

in the cellar : Fermented in classic Burgundian fashion and then matured “sur lie” for eight months in traditional 228 liter “pieces”.
