about the harvest: The grapes for this wine were handpicked at optimum ripeness in the early morning to reach the cellar in prime condition.

in the cellar : In the cellar, the grapes were carefully hand-sorted, crushed and cold soaked for 48 hours and during the fermentation process pumping over occurred up to four times a day. Extended contact with the skins enhanced the distinctive character of the wine, which was left to mature in small French barrels for 17 months.
