in the vineyard : The grapes were sourced from trellised vineyards in the Durbanville, Slanghoek, Paarl and Darling areas. Planted between 1977 and 1989, the vineyards grow in Clovelly soils, and are situated at altitudes of 80 m to 150 m. Grafted onto nematode-resistant rootstock Richter 99 and 101-114, the vines received supplementary irrigation.

about the harvest: The grapes were harvested by hand at between 21,5Â° and 22,5Â° Balling during February and March.

in the cellar : They were crushed and then cool-fermented in temperature-controlled stainless steel tanks for two to three weeks at 13Â°C. Skin contact was allowed for approximately four hours.
