about the harvest: A very balanced growing season delivered excellent fruit with lots of 'cooler' varietal flavours than usual. The average yield was low but of consistent quality. A portion of the fruit was picked very early to conserve the greener Sauvignon Blanc aromas, and a higher natural acid. The balance was given a longer hang time for higher sugar levels, balancing the alcohol and giving more structure to the wine.
