Simonsig Cabernet Sauvignon / Shiraz 2005

Bright ruby colour with a youthful rim. Sweet ripe rasberry flavours on the nose with a subtle influence of toasty mocha on the palate. The Cabernet Sauvignon ensures succulent fruit flavours where as the Shiraz evoke your senses, forming a spicy undertone. in the vineyard : A new blend of Cabernet Sauvignon and Shiraz introduced into the Simonsig range in 2003. Temperatures during the growing season and the harvest period were higher than normal. It will be remembered as one of the warmer seasons, very much like 2000,
which produced fabulously rich red wines with firm tannin structures and great maturation potential. Rainfall figures indicates that this was one of the driest summers in years. The winter rainfall was relatively low and erratic and relatively warm conditions were experienced. Chardonnay experienced uneven budding due to the warm winter. All the other grape varieties had good budbreak, which was followed by uneven shoot growth in some of the reds like Cabernet Sauvignon, Shiraz and Merlot.

about the harvest: Meticulous green harvesting at veraison had to be done to remove the uneven bunched to ensure ripeness at harvest.The Cabernet vineyards planted over the last few years are reaching maturity and balance. This means the quality is improving every year. Cooler fermentation and soft extraction techniques were used to make intensely fruity Cabernet with soft tannin. Shiraz was undoubtedly the star of the vintage. The ease with which Shiraz makes top quality wines is an indicaton that the terroir of Simonsig is ideal for this variety.
