in the vineyard : Made from grapes sourced from Tokara vineyards on our Siberia farm in the Hemel-en-Aarde Valley in Walker Bay.

about the harvest: The grapes were picked between 11and 18 February with a sugar of 21° Balling.

in the cellar : The grapes were destemmed, crushed and pressed immediately. The press juice and free run juice was kept separately and settled overnight before the clean juice was racked off. The juice was fermented at 15° Celsius in stainless steel tanks with selected wine yeast. After fermentation the wine was sulphured and left on the lees for three months before stabilization and bottling.
