in the vineyard : 2007 was a temperate year, which preserved elegance and sophistication in the grape. The grapes originate from an old block of bush vines situated on one of our highest, coolest slopes. Low yields on dryland vines ensure a ripe and concentrated delivery of fruit aromas. Every effort was made to bring the grapes in early and cool to preserve the fruit’s natural acidity and freshness.

about the harvest: As always, all our grapes are hand picked.

in the cellar : After harvesting the grapes were chilled as whole bunches before being gently destemmed, crushed and pressed.

Dry ice and ascorbic acid is used to protect delicate fruit aromas from degredation by oxygen. Once settled with pectolytic enzymes. The clean juice is racked clear of the lees and the wine fermented cold between 10° - 12° C. This low fermentation temperatures capture more of the fruity aromas enhanced by the yeast and help preserve the freshness of the wine.

The wine is cold stabilised, filtered and bottled on site. Since all grapes come from our farm we can truly say that the wine is grown, made and bottled at Welbedacht.
