in the cellar : The Klein Steenberg Merlot-Cabernet Sauvignon-Cabernet Franc is a Bordeaux style blend that has good fruit concentration supported by firm structure and a wonderfully accessible palate. The different cultivars are harvested separately at about 24°B. Once they are crushed and destemmed they are fermented on the skins in stainless steel tanks at about 28°C for 10 days. Hereafter they are pressed and taken to barrel for malolactic fermentation and ageing of approximately 12 -14 months. The barrels are predominantly French oak: a mixture of new, 2nd and 3rd fill. After ageing the blend is chosen from these barrels.
