  • in the vineyard : The grapes originated from TOKARA's Stellenbosch property and cropped at yields around 6t/ha.

    about the harvest: The grapes were picked at optimal ripeness from the 1st of February to the 6th of February.

    in the cellar : The grapes were treated in various ways either whole bunch pressed or destemmed, crushed and pressed without maceration depending on the quality of the fruit. After settling overnight the settled juice was run to a barrel with a certain percentage of lees added back. The juice was inoculated in a barrel and fermentation took place from anything between 15 and 35 days. The wine spent 9 months in a barrel on the gross lees with regular lees stirring. All barrels were French oak with 40% being new from burgundy coopers and the balance was 2nd and 3rd fill barrels. The wine underwent malolactic fermentation. Bottling took place in December 2006 after stabilisation and filtration.
    13700 bottles were produced.
