Elegant and poised. A delicate varietal perfume of white pears, blossoms, litchi and apricots comes through on the nose. The mouth feel is crisp with hints of pink grapefruit and passion fruit. A well balanced wine that leaves a fresh, clean finish on the palate.

about the harvest: The grapes were hand-picked at about 25° B from the Estate.

in the cellar : After harvesting the grapes were carefully sorted on bunch and berry sorting tables, crushed and pressed to tank (no skin contact) where the juice was left to settle overnight. The must was then racked off the gross lees to barrel: 2x225 litre - both French oak, new and second fill - and then inoculated. After fermentation the wine was left on the fine lees for about 1 month, no malolactic fermentation took place. The wine will spent around 8 months in barrel before bottling.

Viognier: Ixia viridiflora (Green Ixia)
Ixia viridiflora is one of the most striking and unusual of our Cape, winter rainfall bulbous plants and very few plants can beat it for sheer brilliance of flower. It is an extremely rare, unique and difficult plant to grow that offers much satisfaction if achieved. As with this grape variety, which is fairly rare in South Africa and is completely unique depending on the style of winemaking and approach to making this wine?
