Western Cape, this is a 30:70 blend of grapes harvested from the coolercoastal (Riebeek) and warmer Rawsonville/Breedekloof region within the WesternCape area. Trellised vines aged 7 – 14 years planted yielded the grapes forthis wine. The vineyards received supplementary drip irrigation and produced 8- 15 tons per hectare.
about the harvest: 100% Pinotage - Grapes were handpicked @ ± 24-25°B early morning,arrived at cellar where the grapes where de-stemmed and slightly crushed. Thejuice was left on the skins for ±6 – 8 hours to achieve the trademark rosecolour. After soaking the juice was racked from the skins, the skins wherepressed and the pressed juice was then blended with the free run juice and leftto ferment in stainless steel tanks with a white wine yeast at 14-16ºC untildry. Juice was left on the lees 3-6 months before blending and stabilization.
