Vineyard Practice
The grapes used to make this Pinotage come from a single vineyard block of 20 year old bush vines, grown weathered granite soil in Darling.

about the harvest: Grapes were hand-picked and harvested at 25 degrees Balling with an average yield of 4 tons per hectare.

in the cellar : Bunch selection in the vineyard followed by berry sorting in the cellar. Grapes were fermented in open French oak barrels with daily punch downs. After malolactic fermentation in barrel, 50% of the wine was matured in new French oak and 50% in second fill barrels for a period of 14 months.
