about the harvest: February / March 2009

in the cellar : Gentle crushing of grapes. Up to 30% whole berries were allowed in the mash. Three rack and return transfers were executed daily during fermentation. The entire process was carried out with the aid of overhead gantry cranes and satellite tanks to enable minimum handling and the use of gravity to preserve fruit flavours. The wine was matured in varying ages of 300 litre French oak barrels for a periods of 8 - 10 months.
