Neethlingshof Lord Neethling Cabernet Sauvignon 2001

Colour: Deep ruby red.
Bouquet: Aromas of dark chocolate, tobacco and vanilla followed by cassis and blackberry.
Taste: A full-bodied wine with flavours of blackberries and prunes resulting in a lingering finish with a good tannin structure.

This wine is an ideal companion to red meat dishes such as roast lamb and stews.

in the vineyard :  The vineyards (viticulturist: Hannes van Zyl and Peet Blom)
Planted in 1987 the vines which produced this wine are grown on north westerly facing slopes 120 m above sea level. The vines are grafted onto nematode resistant rootstocks Richter 99,101 and 14 and are trellised on a five wire system.

about the harvest: The grapes were hand harvested between 23° and 24° Balling.

in the cellar :  After destalking and crushing the mash was fermented using a selected pure yeast culture. Fermentation took place at 28°C over five days. After malolactic fermentation the wine was matured in French oak barrels for 19 months.
 
After a light egg white fining the wine was filtered through a sheet filter and bottled.
