The 1997 Lord Neethling Cabernet Sauvignon is drinking well already with lots of fruit and beautiful balance. It is well-partnered with red meat and mature cheeses. Serve at 18°C.

in the vineyard : Classic Cabernet Sauvignon; the first to be bottled under the super-premium LORD NEETHLING label from original vines imported from France and planted on resistant rootstocks suited to local conditions. The vines are virus-free, ensuring optimum ripening of the grapes. Grown in vineyard blocks facing south, west and east, in decomposed granite and clay soils at 85-200m above sea level, the oldest Cabernet Sauvignon vines on the property are around 22 years of age.

about the harvest: 1997 was an excellent year for cabernet sauvignon! The grapes were hand-picked at 24 - 27 ° Balling

in the cellar : Fermented in temperature-controlled Roto tanks for a period of 5 days at 30°C. After completion of malolactic fermentation, the wine was racked from stainless-steel tanks to 225 litre French barrels. Maturation in these barrels lasted for a period of 24 months after which the wine was fined and bottled.
