Bay View Merlot 1999

Fragrant and velvety, the wine brims with rich, ripe flavors of plums and blackberries, with a touch of vanilla. Supple tannins lend good structure to this elegant, well-balanced wine.

about the harvest: A second winter of unusually warm, dry conditions brought vines on early. A cool snap at flowering led to vastly lower yields in early-ripening varieties while yielding excellent quality. The grapes for this Merlot were selected from 10 year old vines perched on the south-western slopes of the Stellenbosch mountains, and were harvested at 24.6° Brix.

in the cellar : The grapes were destemmed with crush rollers open to allow up to 50% of the whole berries into the press. After three days of cold maceration, 70% of the juice was fermented in French oak and the rest in stainless steel tanks. To retain the natural fruit flavors of the grapes, the wine was bottled without filtration.
