Steenberg H.M.S. Echo Red Blend 2009

An elegant wine with dark red fruit dominating the nose. Hints of liquorice and dark chocolate with cigar box and cedar oak round off. On the palate the wine shows elegant tannins with great structure. Smooth, voluptuous flavours of dark chocolate and cassis with an aftertaste that ECHOES Echoes echoes....

in the cellar : Each cultivar was fermented separately on the skins for about 14 days. Pump overs were done three times a day to extract colour and tannin. After fermentation the wines were racked into small French oak barrels - a combination of second and third fill - undergoing malolactic fermentation, then aged for 12 months. The wines were then racked, blended and returned to barrel for another 8 months. A light egg white fining was done before bottling.
