in the vineyard : Our Pinotage 2009 was hand picked at optimum ripeness, sorted and vinified from 12 year old dry land bush vineyards.
in the cellar : Fermentation – shorter fermentation and maceration period than other reds with extra plunging to enhance colour and fruit flavours. Oaking – oaked for 14 months in a selection of 60% new, 40% 2nd fill French and Eastern European oak barrels. MLF completed in barrel.
