Neil Ellis Stellenbosch Cabernet Sauvignon 2009

Medium red, purple in colour, the wine has tones of blackcurrant, violet and cedar aromas with touches of mint. The rich, ripe opulent but youthful palate has plummy fruit, a background of new oak and fine tannins.

in the vineyard : Trellised vineyards with supplementary irrigation grown on mainly decomposed granite soils.

about the harvest: Harvest commenced on 26 February and completely on 20 March. Grapes were harvested between 23.8°B and 25°B with a total acid of 3.46 g/l and a pH of 7.3.

in the cellar : Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration was allowed before drawing off and light pressing. The wine spent 18 months in 30% new French oak barrels. The balance in second and third fill. Bottled in November 2010.
