The Shiraz grapes for this varietal red wine were picked from vineyards in the lower lying area of the farm where the warmer temperatures promote good, even ripening of the grapes. The stoney, clay soils of the vineyards restrain the naturally vigorous growth of the Shiraz vines to direct their energy to the berries and concentrate their varietal flaovurs.
Vinification:
The wine was fermented in traditional red wine fermentors on the skins for 10 days to extract maximum colour. Thereafter, it was racked from the lees into new 300 and 500 litre barrels of French oak, where it remained for 10 months. Malolactic fermentation occurred in the barrels.
