Rietvallei Special Select Juanita Rosé 2011

This wine was named after my mother, Juanita, and the maiden vintage was 2004.
It is a very fruity but dry rosé made from 100% Cabernet Sauvignon. A mixture of berry fruit flavours and candy floss explode on the nose while the palate reveals a full-bodied wine with lingering aftertaste. A rosé not to be taken lightly.

Pair with seafood, especially salmon, and salads.Serve chilled (8 - 11ºC).

in the vineyard : The Cabernet Sauvignon was planted in 1998 on a portion with a very high concentration of river stone situated on the highest hill on the estate some 155 metres above sea level.

The selection process for this special cuvée already started with the identification of this specific vineyard and working at it with special care from pruning right through to harvesting ensuring a low yield (approximately 8 tons per hectare) and premium quality.
about the harvest: The grapes were picked at 25° Balling (Brix) specially for the making of this wine.
in the cellar : After de-stemming and slight crushing the mash was taken to stainless steel tanks where it cold-soaked for 24 hours. The free run juice was then racked, cold settled and racked again from the lees and transferred to the fermentation tank. A special cultivated yeast was then inoculated and the fermentation regulated at 15°C. The must took about two weeks to ferment dry and the wine was left on the fine lees for a month before stabilizing, cleaning and bottled end of April 2011.
