Dombeya Cabernet Sauvignon 2008

Winemaker's Comment:
This is the third vintage that has been harvested form selected Cabernet Sauvignon vineyards. What is clearly apparent is the huge progression in the quality of the garpes produced since 2005.
We work extensively on crop managemnt on the younger vineyards. The vineyards planted in ''99 are now in balance and are producing small berries with complex fruit flavours and elegant tannin structure.

Tasting Note:
Although still young with a tight tannin structrure, the wine opens up with lovely black berry, cassis and cedar wood flavours. The palate is smooth with fine tannnins and lingering fruity concentrated aftertaste.

This will go well with venison beef, cheese and even a well matured cigar. Decanting is advised.

in the vineyard : Soil & Terroir
All of the vineyards are on North facing slopes. The soils consists of rocky clay of 10 to 15%, which gives good water retention ability. Supplementary irrigation was uses sparingly and on a needs basis during the growing season.
about the harvest: All the grapes were harvested by hand. Due to the diversity of our soils we harvest parts of the vineyards at different times. The majority of the Cabernet vineyards ripen in the first two weeks of March.
