Vineyard Management
Vineyards were pruned to two-bud spurs and excess shoots removed, leaving only two to three per hand-spaced spur. After veraison, uneven bunches were removed for better flavour concentration in the berries.
about the harvest: Grapes were both hand and machine picked.
in the cellar : Pressing took place at or before completion of fermentation to extract soft tannins. After fermentation, the wine was matured briefly in large oak vats before bottling.
