Viticulture
A stringent process was followed to ensure that the coolest slope for slow ripening and ultimate flavour development was chosen. Great care was also taken in foliage management, the process of enhancing fertility in the vines and exposing the grapes to more sun which ensures the correct skin thickness for higher extraction and intensity.

about the harvest: Grapes were harvested by hand to minimise damage to the berries, ensuring less juice waste and oxidation of flavours before destemming and crushing.

in the cellar : The grapes were chilled in bunches to remove leaves before sorting commenced. After destemming, the grapes were once again sorted by hand to ensure optimal size selection and to get rid of unwanted raisins, pink as well as large grapes.

Cold soaking preceded temperature-controlled fermentation in stainless steel tanks and open-top French oak barrels. Free run wine was drained to a combination of first and second fill barrels. The wine was matured for 18 months to obtain the ultimate balance in flavour and structure. Barrel selections were made to create this beautiful example of a structured Cabernet Sauvignon, with ample ageing potential.
