about the harvest: The grapes are picked ripe to enhance the fruit flavours: the Sauvignon Blanc from specific areas inside the vineyard and the Chenin Blanc from newly trellised vines.

in the cellar : The Sauvignon blanc was treated reductively to the tank where it was cold fermented with a combination of yeasts. The Chenin blanc was treated non-reductively and was cold fermented with suitable yeast. Both the cultivars were left on the yeast lees for a few months before blending.
