in the cellar : Fermentation: Cold maceration. Fermentation on the skins in stainless steel tanks with regular pumpovers. MLF took place in stainless steel tanks.
Oaking: 225 litre French (90%) and American (20%) oak barrels. A combination of 2'nd and 3'd fill barrels used.
Aging: Matured in oak barrels for 16 months.
