about the harvest: Grapes handpicked & sorted.

in the cellar :
A two to three day cold soak at 12 - 15ÂșC ensured max colour extraction in a non-alcoholic environment

Early fermentation; regular pumpovers & punchdowns were done to aid flavour & tannin extraction. After malolactic fermentation, wine was racked into new & 2nd fill 225L French oak barrels. After 9 months the most flavoursome barrels were selected, blended & returned to oak for a further 9 months.
