Enticing aromas of black forest cake, ripe plum, cherry and vanilla beckon on the nose. On the palate subtle hints of roasted coffee bean combine with oak spice while delightful dried fruit flavours linger on the aftertaste.

in the vineyard : 
Organically farmed, trellised with drip irrigation with different cover crops and organic mulching to stimulate healthy soil microbic activity. Strict pruning and green leaf management, essential for pest control. 

Bunches were thrown off at certain stages of ripening to decrease the yield. This was done to ensure consentrated fruit development on the vine prior to harvest.

about the harvest: Picked at 25° Balling.

in the cellar : 
Fermented to dryness on the skins after which extended maceration on the skins followed for another 14 days.

Wood Maturation:
100% matured in 225 litre barrels. 85% French oak and 15% American oak.
