in the vineyard : A cool start to the 2012 vintage provided for excellent flavour retention. Sporadic heat waves later in the harvest allowed grapes to be picked at optimal ripeness ensuring great body finesse and structure in reds.

about the harvest: The grapes from Delaire's mountain vineyards were handpicked in the early morning.

in the cellar : 

Extensive sorting of the grapes formed part of the quality management process. The grapes were de-stemmed only, not crushed, to ensure gentle extraction of fruit flavours. Whole berry fermentation and gentle punch downs ensured extra care in handling of grapes. After basket pressing, the wine matured in French oak barrels for 14 months where malolactic fermentation took place.
