Genesis Merlot 2000

Deep red. Intense chocolate, spice and berry aromas gently supported by a hint of vanillin oak. Full-flavoured on the palate with lingering blackberry, mint and chocolate, fine tannins and long finish. Good choice of wine to complement the characteristics of meat dishes associated with South Africa, such as Kudu and Ostrich.

ageing : Drinking very well now, but will develop further character with several years of bottle maturation.

in the vineyard : Vines were grafted onto R110 and 101-14 Mgt rootstock on bush vines on higher south-facing slopes of the Helderberg. The average age varies between 13 and 15 years, with an average yield of 5 to 8 tons per hectare. Weather during the ripening season was sunny and dry, but vineyards were cooled by the prevailing winds blowing in over the nearby False Bay.

about the harvest: Grapes were harvested at 24,5ºB at the end of February.

in the cellar : Fermented in a combination of open (hand plunged) and traditional fermenters. Two weeks on skins after fermentation. Matured for 12 months in 70% new and 30% 2nd-fill French oak, followed by gentle egg fining before bottling.
