Genesis Merlot 1999

Deep red. Intense chocolate, spice and berry aromas gently supported by a hint of vanillin oak. Full flavoured palate with lingering blackberry mist and chocolate, fine tannin and long finish. Good choice of wine to compliment the different characters of meat dishes associated with South Africa, like kudu, or ostrich.

in the vineyard : All of these vines are grafted on either R110 or 101-14 Mgt on bush vine on higher southern slopes. The average age differs between 13-15 years, with an average yield of 5-8 tonnes per hectare. Weather during the ripening season was sunny and dry, with the cooling effect of the Atlantic Ocean.

about the harvest: Grapes are harvested at 24.5°B at the end of February.

in the cellar : Fermented in a combination of open fermenters (hand plunged) and traditional fermenters. Two weeks on skins post fermentation. 12 months in 70% new oak, 30% 2nd fill all French and then a gentle egg fining before bottling.
