ageing : 8 years from the vintage
in the cellar : The young wine is transferred to 225-litre barriques for malolactic fermentation and maturation. After 12 months in 70% new barriques a careful selection is made, the selected barrels are racked and the wine is transferred to second-fill barriques for a further 10 months of maturation. The blending of our Reserve Shiraz is undertaken with great care, and the selection of the very best barrels is key. The Swartrivier Shiraz is a wine that will stand the test of time, thanks to concentrated fruit and rigorous selection of the best fruit.
