Stellenryck Cabernet Sauvignon 1995

The wine is intense on the nose dominated by fruit aromas of black current and complemented by spicy aromas of cinnamon and vanilla. On the palate it is full-bodied with lovely and intense berry and fruit flavours. It is full-round with soft tannins that finishes with fruit and vanilla flavours.

in the vineyard : The Stellenryck Collection of wines is made only in vintage years when optimum climatic conditions produce grapes of the highest quality. The world’s noble varieties are chosen for the Stellenryck’s single varietal wines.

The grapes came from trellised vineyards in the Stellenbosch and Durbanville areas.
about the harvest: The grapes were picked by hand between 23 and 24° Balling at the beginning of April.
in the cellar : In the cellar the juice fermented on the skins at 28°C for 8 days. After malolactic fermentation the wine was matured in wood for 18 months – 60% in new French oak and 40% in second-fill casks.
