La Motte Limited Release Chardonnay 1999

La Motte Chardonnay is only made in exceptional years. This creamy Chardonnay with its bouquet of citrus, fresh almonds and nuts has a superb mid-palate of buttery vanilla and a lingering finish. Essentially a fine food wine. Excellent with caviar, snails, carpaccio, pate, crayfish, prawns, langoustine, mussels, perlemoen (abalone) and creamy cheese.

Canopy management: More leaves absorb sunshine for the formation of aromas and the grapes are protected from the sun.
about the harvest: Vintage 1999: Normal winter: 894 mm well-scattered rain recorded on La Motte until the end of November. This was followed by only a further 2 mm of rain until the end of March. It was a long, dry summer.

Seperate harvests of blocks 30 and 31 at 23.6º Balling: early morning, February 8, 1999.
Yield: 7 tons per hectare.
in the cellar : Fermentation: Juice started to ferment spontaneously. No temperature control. After secondary malolactic fermentation the wine was left on the lees in the barrels for 7 months.

Maturation: Was matured in new French oak barrels for 12 months. 40 barrels were specially selected for the final Chardonnay blend.

Wine bottled in the La Motte cellar on December 18, 2000. After a further 6 months bottle-ageing, only 930 cartons were released.
